According to some Italian Gelato makers, such as Paolo Constantini, two secret behind nicely done dessert is using fresh ingredients and being faithful to traditional methods.Constantini said: “Because we always use fresh products. We carefully select all raw materials such as cream, milk, sugar. Fruits are completely natural. We use 75 per cent fruit juice, there is neither milk nor dairy products. It is completely natural, we do not add anything else.” explaining a part of Gelato making.To expand the difference between ice-cream and Gelato, renown Gelato maker Eugenio Morrone, emphasized that "Gelato", is not the same as "ice-cream" continued as follows:"Consumption culture also comes into play here. Gelato has a tradition like pizza. The machine where Gelato is prepared is different from the machine where ice-cream is prepared. In the machines that produce ice-cream, more air is always pumped, but in the Gelato we make here by hand, the air blowing rate is around 15-25 per cent.
